Castilian garlic soup
Castilian Garlic soup or Castilian soup is a very complete dish despite the very few ingredients it contains. It was eaten as lunch to start the hard and cold days of work in the field.
With few ingredients we will prepare a delicious garlic soup, this soup was made in the past to take advantage of the hard bread that had been accompanied by sausages, ham, garlic and egg. As you will see, a very cheap meal that resurrects a dead person.
We can cook only with water or enrich that water with chicken so that it has more flavor, the touch of the recipe is to add the raw egg once the soup is finished and that it is finished cooking on the plate
What do we need to make garlic soup?
Ingredients for 4 people:
- – 2 tablespoons olive oil
- – 1 large onion, diced
- – 3 cloves garlic, minced
- – 1 teaspoon ground cumin
- – 1/2 teaspoon smoked paprika
- – 3 cups chicken broth
- – 2 cups diced potatoes
- – 2 tablespoons sherry
- – 1/4 cup chopped parsley
- – 1/4 cup chopped fresh cilantro
- – 2 tablespoons tomato paste
- – Salt and pepper, to taste
- – 1/2 cup heavy cream
- – 1/4 cup grated Parmesan cheese
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook for about 5 minutes, until the onion is translucent.
2. Add the cumin and smoked paprika and cook for another minute.
3. Add the chicken broth, potatoes, sherry, parsley, cilantro, and tomato paste. Season with salt and pepper, to taste. Cover and bring to a boil.
4. Reduce the heat to low and simmer for 15 minutes, until the potatoes are tender.
5. Add the cream and Parmesan cheese and simmer for another 5 minutes.
6. Serve the Castilian garlic soup hot with crusty bread. Enjoy!
