Ajo arriero
The ajo arriero is a typical Spanish dish from the La Mancha and Aragon area, it is a delicious and very forceful dish which is made up of quality foods.
It is a very filling dish, it is not a fine dish, but it is delicious.
HOW TO MAKE AJO ARRIERO
Ingredients for 6 people:
- 250 gr of cod.

600 grams of potatoes.

3 garlic cloves.

40 grams of walnuts.
- 2 hard boiled eggs.
- Salt.
- Water to cook the cod of which we will use about 200 ml to mix it with the rest of the ingredients.
- 100 ml of extra virgin olive oil and a little more to decorate at the end.
Step by Step:
1. Desalt the cod and shred it, removing all kinds of bones.
2. Cook the potatoes, eggs and finally peel the potatoes
3. Put a saucepan with water over medium-high heat and, when it boils, add the cod and let it cook for 5 minutes. Remove from the heat, remove the cod to another container and reserve the broth as part of it is going to be used.
4. Mash the potatoes and cod to your liking, either in a large mortar or by passing through a potato masher or simply mash with a fork.
5. Add the garlic and oil to the potato and cod mixture and mix well.
6.Now go adding water from cooking the cod little by little and mixing.
7. Serve with walnuts and quartered or sliced hard-boiled eggs on top along with a drizzle of olive oil.
